Pineapple Dijon Dressing... Fighting Inflammation!!!

1 quart pineapple especially the core

1/4 cup lemon or lime juice or apple cider

1 tbs Dijon mustard

1 Tbs crushed garlic

2 tsp Himalayan crystal salr tsp mustard powder

1 tsp ground pepper

2-3 dates

1 cup extra virgin olive oil

  • Place all in a blender and blend.  Dates can be soaked in hot water for a few minutes if you do not have a high powered blender.  Serve with any type of fresh salad or vegetables

Pineapple core contains bromelain which fights inflammation.  Can omit the mustard and add chili peppers which have cur cumin which also fights inflammation.

This is my favorite dressing and is always in my fridge.  The best part is that it can last for up to 3 weeks .
