After Dinner Cacao Mints, (All Raw, Vegan, no white sugar and gluten, grain free)

My niece asked if I could make Chocolate Mints after she tasted some at a raw, vegan restaurant.  I took on the challenge and this is what I came up with.  I am happy with the results.  They taste like the real deal without all the sugar and preservatives

After Dinner Cacao Mints

1 cup shredded coconut

1 cup cashews

1/3 cup maple syrup,  or agave

1/4 cup mint leaves, rib and stems removed(obt)*

2 teaspoons peppermint extract

1 tsp vanilla extract

1 tsp lemon juice

 pinch Himalayan salt

1/3 cup coconut oil, melted

Make coconut flour in a dry Vita-Mix container using shredded coconut,  blend on high until it resembles fine flour, set aside in a bowl.  Put rest of ingredients in blender and blend until smooth.  Adding coconut oil last.  In a food processor add all ingredients until mixture is smooth.  Place in refrigerator until it is slightly firm.  Roll into a log and slice into medallions and refrigerate until firm.  Dip into chocolate coating and store in refrigerator

*This is to give the mixture a green texture and add flavor. If you omit this add 1/4 tsp more of

peppermint extract

Chocolate Glaze

1 cup agave nectar or maple syrup

1 cup cacao powder

2 Tbs Coconut oil, melted 

1 tsp salt

1 tsp vanilla extract

Blend all ingredients until smooth
