Broccoli Salad with Raw Vegan Cashew Dressing

1 Bunch Broccoli

1/4 onion, chopped

1 grated carrot

1/2 cup Pumpkin Seeds

1/2 cup dried cranberries or golden berries

1/4 cup Hemp Hearts (added protein)

Dressing

1 cup Cashews soaked for 2 hours or more

2 Tbs Olive Oil (obt)

1/8 tsp Himalayan salt

1/2 tsp Dijon Mustard

1/2 lemon juiced

Method 

Cut Broccoli into small florets and cut the stalks closets to florets into small pieces.  Add the ingredients into bowl.  

Dressing

Put Cashews in a blender.  I use a vita mix.  Cover cashews with water until just covered.   Add rest of ingredients and blend until smooth.  Add to Salad.  If able leave salad to marinate for a couple hours.

 

 

 

Cut Broccoli in small florets.  Cut the stalks very small.  Mix ingredients in a bowl
