The Best Energy Chocolate Seed Balls

I am always experimenting on energy balls that are quick and easy and have all the nutrients packed in for a quick pick-me-up.  These are so delicious and energizing.  They have kept me energized on a long journey and on the way to the gym when I am in a hurry and only have time for a smoothie.   The best part about these energy balls is that they are made with seeds and not nuts which makes them more affordable.  Once again, the seeds can be switched for other preferred ingredients.  A bonus is that they are not very sweet but surprisingly fill that void and my Grandchildren eat them!

The Best Energy Chocolate Seed Balls

2 cups Pumpkin Seeds

2 Tbs Chia seeds

½ cup Hemp seeds

¼ cup cacao* (a raw cocoa powder) can use regular

1 cup shredded coconut

2 cups ground Oat groats*(steel cut oats)

1/4tsp Himalayan salt

12 dates

1 cup vegan sugar free chocolate chips*

3/4 cup coconut oil(melted)

Method

Add all ingredients except dates and coconut oil to food processor using the “S” blade.  Process for 20 seconds until crumbly and slowly add the dates one at a time so that they do not get stuck on the blade.

Melt Coconut oil and add to mixture and process for 20 seconds.  Add the chocolate chips* and process for 10 seconds.  Make small balls or put in a pan and put in the fridge for 1 hour before cutting them.  These store very well in the fridge for up to 1 month.

Obt: The balls can be rolled in coconut, Matcha Powder, Cacao Powder, Sesame Seeds, Hemp Seeds etc.

*Chocolate chips can be switched to dried fruit such as raisins, cherries, figs, cranberries etc.  You will need to mix the balls longer in the processor to break them down.

**Oat groats or kernels can be replaced with steel cut oats.  I do soak my groats for 24 hrs to release the enzymes and then dehydrate for 24 hrs to dry them out for storage keeping the enzymes intact and removing the acid for easy digestion.  This is not necessary.

*Raw cacao has not gone under a roasting process keeping all those wonderful phytonutrients intact for optimal nutrition.  They are more expensive, but I think your health is worth it.
