1/2 cup slivered Almonds

1/2 cup organic cane sugar or coconut sugar

1/4 cup dried cranberries

1/4 cup dried apricots

2 tbs dried blueberries or other dried fruits

4 dried prunes or dates

1/4 cups Muscat Wine or dry red Wine or fruit juice

2 cups thai coconut meat or soaked cashew or canned coconut milk(use the solid part and pour off the water. You do not need to put this in a blender

1/4 cup Aquafaba(chickpea water)

Soak dried fruit with the wine overnight

Line a sheet pan with parchment paper and set aside.

In a small sauce pot add the sugar and the water. Over high heat bring the sugar and water to a boil

Continue to boil until the sugar begins to change colour to alight golden colour

Add the almonds, stir briefly with a wooden spoon or high heat spatula and pour the sugar mixture onto the parchment lined sheet pas. Allow to cool and chop into pieces

Make meringue by beating the aquafaba until frothy or peaks form for extra lightness

To make the cream: Place thai meet or cashews in a blender and blend with 1/2 cup of water until it is smooth and looks like cream. Add more water if needed

Combine all the ingredients and place in a lined loaf pan. Freeze for 24 hours until firm. Serve with toasted almond, granola and cranberry sauce.
