Butternut Chickpea Curry

1 butternut peeled and chopped

1 cup fresh or frozen peas

1 cup chickpeas(cooked)

3 cups fresh spinach

1 large tomato

½ cup chopped Cilantro

1 peeled onion, Chopped

2 cm fresh ginger, peeled

4 cloves garlic peeled

3 serrano chilies stemmed and seeded Add more if you like it spicy.  Can use dried chili or powdered

2tsp whole or ground cumin*

1tsp whole or ground coriander*

1 tsp turmeric powder*

2 Tbs coconut oil

1 can of coconut milk

Juice of ½ lemon

Salt and pepper

1 cup raw cashews

Sauté onions in coconut oil or grapeseed oil or a little water.  If using whole spices put them together with the ginger and garlic and turmeric and crush them in a mortar and pestle or in a blender.  Add the spices to the onions and cook for 3 mins. This helps to bring out the flavors of the spices.  Add the Coconut Milk, spices, chopped tomato and butternut and cook for approximately 20 mins until butternut is slightly softened.  Add chick-peas and peas.  I do not cook the peas as I like them crunchy.  Add the spinach just before eating and mix in. sprinkle with cilantro and add the cashews.

*you can use your favorite curry powder instead of the spices
