Pickled Onions. What a great way to get all those macro and micro nutrients and bring some probiotics to your gut

Onions are very good for keeping your blood sugar in check.  Diabetes is becoming so common as well as other Autoimmune diseases caused by inflammation which is indirectly caused by elevated blood sugar, onions are important to bring into your diet.  Folate is a phytochemical found Onions that helps absorb iron to its full potential and is often recommended to pregnant women. Some vegetables such as broccoli, cauliflower, and onions help the body produce its own antioxidants. This is the best way to help prevent the effect of free radicals. Studies show that onions help the body produce Glutathione. This not only helps fight cancerous elements, but is also extremely beneficial in maintaining a healthy heart.

Pickled Onions

2 large Onions, Sliced in rings

2 cups boiling water

1Tbs Pickling Salt or Mediterranean course salt

Juniper Berries (obt)

1 Mason Jar, sterilized by using a dishwasher or cleaning very well and filling it half full with hot water and leaving it in the oven at 350 for 10 mins

Stuff onions into the jar and Juniper Berries Boil the water and add the salt.  Dissolve and pour over onions.  Add lid loosely and leave jar on the counter for a few weeks.  Everyday loosen lid and then close.  Put in Refrigerator and you can eat right away.  I find the longer it is left in the fridge the tastier it becomes
