Anyone Love Nachos? A Perfect Cashew Cheese Sauce

This Cheese Sauce is the best I have found so far.  It will work on any foods that needs "Melted Cheese".  It makes a delicious replacement for the hard, melted Cheeses.  This is the cheese I am using for the Nachos I serve at the market.  If you are in Town, Orillia, Canada, Come down and try some.  You will be hooked.  Its also a crowd pleaser when you go to those events that do not offer vegan or dairy free options.  If you look at the ingredients everything is recognizable and healthy.  What could be better???

2 cups Cashews

2 Tbs  Miso paste ( A fermented product)

1 Tbs Coconut Oil

1/4 cup nutritional yeast

1/2 tsp Himalayan or Celtic salt

1 Tsp Fresh Lemon Juice

1 cup boiling water plus more if needed

Place Cashews in filtered water in a bowl overnight and cover.

Drain Cashews. Place all the ingredients in a blender. I use a Vita Mix.  Blend on medium speed and using the plunger to mix the ingredients.  Add additional hot water a little at a time until desired consistency is reached.  Adjust the seasonings to taste

Pour Sauce over nachos or over veggie pizza fresh out to the oven.  or over Cauliflower
