Chocolate Macaroons for all those Chocolate Lovers. All Raw, Vegan and using natural sugars

These are so delicious and nutritious. I do love Chocolate and love creating new recipes that one does not have to feel guilty eating. I use Cacao which is cocoa in its raw form. It has not undergone any roasting process keeping all the nutrients intact. It is high in Minerals such as Calcium and Magnesium and Iron as well as a good source of protein. Cacao is more expensive than cocoa so if you want to save some money then switch it for the regular cocoa. I do these in the dehydrator but you can use your oven on the lowest heat for 4 hours or 350 deg celsius for 20 minutes or until crispy on outside but soft on the inside

Chocolate Macaroons

3 cups dried, unsweetened coconut flakes

1 ½ cups cocoa powder

1 Tbs Maple Syrup (add more if needed)

1/3 cup coconut butter (melted)

1 TBS vanilla extract

½ tsp Himalayan salt

In a large bowl, combine all the ingredients and stir well to combine. 

Using a small ice cream scoop, your hands or a big tablespoon, spoon rounds of the dough onto dehydrator screens.  If you are using your hands, It helps to refrigerate the mixture a bit prior to forming the macaroons.  Dehydrate at 115 deg for 12 to 14 hours or until crisp on the outside and nice and chewy on the inside

For Blonde Macaroons:  Replace the cocoa powder in the recipe with equal amount of fine almond flour
