I was in grocery store and saw these beautiful Organic Fennel Bulbs. I love using fennel as it is a little exotic, interesting and has very distinctive flavours, namely licorice. I was thinking what I could pair it up with and this is what I came up with. It was so delicious that I ate the whole salad. Do not be nervous of vegetables and fruits you do not know. There is a whole variety of different foods that make our lives interesting and keep the adventure going…

Fennel Salad

1 Fennel Bulb

1/2 cup Cherry tomatoes, sliced

1 cucumber, chipped

1 apple chopped

cut of the bottom brown part of the bulb and cut off the stalks but save them as the leaves are delicious if you add them to another salad. Slice the bulb very finally, by hand or with a mandolin. If may need to slice them in half if you prefer smaller pieces . You could also chop the bulb if you prefer smaller pieces. Add all ingredients to a bowl.

Dressing

1/2 cup Cashews

1/2 cup Olive oil or less if you prefer. You can omit oil if you prefer

2 cups water

1/2 tsp salt

1/2 lemon

1/4 cup date paste (look for my recipe) If you don’t have date paste, soak 4 dates.

Place all ingredients in a vitamix or blender and blend until smooth. Add to Fennel Salad. Can chill for a couple hours.
