Delicious Breakfast Oat Cookies that are hard to resist

These cookies are so easy to whip up and versatile. They can be cranberry or chocolate chip cookies or anything else you can dream up. Sometimes one just needs a quick snack or breakfast. These are so healthy you will feel the energy oozing out of them. Give them a try. I take them on my travels to have as back up when healthy options are not available or my plant based foods are used up in my body and I need that extra pick m up to get me to the next bowl of vegies.

1/4 cup raw cashew or walnuts

1 Tbs hemp seed

1 ripe banana

1 cup rolled oats or sprouted oat groats

1/3 cup unsweetened shredded coconut

pinch of salt

pinch salt

1/4 cup vegan chocolate chips( dark chocolate) or cranberries , raisons, apricots and dried pineapple

1 Tbs ground flax seed or ground chia seeds

2 Tbs coconut oil, melted

1 tsp maple syrup or date paste

if using the oven, turn on to 350 deg F . If using dehydrator get sheets ready with teflex sheets.

Put all ingredients except chocolate chips in a food processor with S - blade. Process until it forms a dough and add the chocolate chips.

Spoon a teaspoon of mixture on sheets. If using oven line the baking sheet with parchment paper.

bake for 15 minutes or in Dehydrator for 12 hours.

Enjoy. leave in sealed container for 4 weeks or longer
