Hors d' oeuvres: Banana Blossoms in Coconut Cream Sauce. Having Fun in the Kitchen and surprising your guests

Eating banana leaves is healthy in every way. It is packed with polyphenols, which are natural antioxidants that is also found in green tea. These polyphenols battle all the free radicals in the body and prevent diseases. Banana leaf is also rich in polyphenol oxidase which is an enzyme to treat Parkinson's disease.

Banana Blossoms in Coconut Cream Sauce

1 banana Blossom

1 lemon squeezed for soaking

2 tbs olive oil

1 inch ginger Julienned

1 chipotle in Adobo sauce. Add more if you like it spicy

3 cloves Garlic crushed

1 onion

1/4 cup Tamari sauce or Soy sauce

1 cu coconut cream or 1 can coconut cream

Clean the Leaves by separating and removing the stamens and fur. Slice thinly and soak for 2 hours in 1 tsp salt and 1/2 lemon juice in water. Rinse and repeat. and Rinse again.

Heat Olive oil or water and add onions. Cook until translucent and add the garlic, ginger and stir for 1 minute. Add the Leaves. Stir for 5 to 10 minutes until leaves change colour. Add the tamari sauce and coconut milk. Sprinkle salt and allow to simmer for 30 minutes.

Serve warm or cold with bread or crackers or on its own. Garnish with red peppers or chopped parsley or Cilantro
