THUMBPRINT COOKIES, RAW, VEGAN, GLUTEN FREE AND DELICIOUS

I am so excited to share this recipe with you.  I suddenly had a hankering for these cookies.  The Mennonites make these cookies and of course they are made with  flour and sugar.  I wondered if I could try and make a living version of these.  They are now my favorite cookies.  Its so nice to have cookies that are tasty and healthy as well.  You will not eat more than 2 as they are very satisfying.  If you don't have a dehydrator you could try putting your oven on the lowest heat and leave them for 1 hr till crisp but still soft

THUMBPRINT COOKIES, RAW VEGAN AND GLUTEN FREE

INGREDIENTS 

11/2 CUP Almonds (soaked and dehydrated)

11/2 cup cracked oats (soaked and dehydrated)

½ Tsp pure vanilla

1/8 tsp Himalayan pink salt

2TBS Maple Syrup

½ cup Coconut oil (softened)

Grind nuts and oats into flour with a food processor.  Add rest of ingredience and pulse till mixed, 4 times.  Using an cookie scoop ( a small ice cream scoop) place cookies on dehydrator tray with teflex sheet.  Make a thumbprint on each cookie and dehydrate for 18 hrs.  Using a vegan Jamput a small spoonful into the prints.

Raw Jam

1 cup of fresh berries.

 ½ cup soaked dates

Drain water off dates and add berries and dates to blender and blend until smooth. This jam will only last for 1 week in fridge.

Makes 24 cookies
